You don’t always get what you pay for when you shop at the supermarket, in fact you can pay a lot more for Italian specialities of second quality - a quality most Italians would turn their nose up at.The Fine Cheese Co. we buy our Parmesan Reggiano directly from Parma every 2 weeks. We select from the finest producers cheeses aged for 30 months - at least 8 month older than most Parmesan you find in the shops.
At this age it still has a sweet, nutty taste, and a depth of flavour that means adding less to your pasta sauces, as well as giving a ‘stand out’ quality when shaved into salads, or eaten in nuggets with a glass of Vin Santo.Italians also know that the best way to keep Parmesan in the fridge is to buy it vacuum- packed. Just open the end and break off what you need and the cheese will keep for weeks without going ‘waxy’ and hard. Another Italian staple that is so often sold in poor quality is dried Porcini mushrooms. We all have experienced the ‘floor sweepings’ that pass for this very special wild mushroom.
