These recipes are part of the beach body diet weight loss programme

This fresh, summery salad can be spiced up with sliced red chilli.

Serves 1

½ small, ripe papaya
Large pinch dried seaweed (eg, arame)
½ red pepper
3in cucumber
1 spring onion, finely sliced
100g cooked prawns
½ lime, juiced
1 tsp soy sauce
1 tsp mirin (optional)
1 tbsp fresh coriander, chopped
1 tsp sesame seeds

Cut the papaya in half, scoop out the seeds, peel and cube. Rehydrate the seaweed in a little hot water and then drain. Cube the pepper and cucumber. Toss together all the ingredients (except the sesame seeds) in a bowl. Sprinkle with the sesame seeds and serve straightaway.

QUICK BEAN SALAD

This is an easy staple and makes an ideal packed lunch.

Serves 1

1 400g can mixed beans, drained and rinsed
2 cherry tomatoes, quartered
Handful of rocket
1 spring onion, sliced
1 stick of celery, finely sliced
2 tsp olive oil
2 tsp balsamic vinegar
2 tbsp fresh parsley, finely chopped

Mix the beans with all the other ingredients, and that’s it.

ALTERNATIVE LUNCHES

SMOKED TROUT SPREAD In a blender, whizz 125g smoked trout (or mackerel) with 2 tbsp natural yoghurt, 1 tsp horseradish sauce, a squeeze of lemon juice and a dash of Tabasco. Stir in 2 tbsp chopped parsley and serve half with a green leaf salad and oatcakes. Refrigerate the rest for the next day.

GAZPACHO In a blender, combine 400g tinned tomatoes, ¼ red onion, 2in chopped cucumber, 1 seeded, cored pepper (any colour), 1 peeled garlic clove, 1 tbsp lemon juice, 2 tsp olive oil, 1 tbsp chopped parsley, freshly ground black pepper and a handful of ice. Put a pile of shredded cooked chicken or prawns in a soup bowl, pour over half the gazpacho and keep the rest in the fridge for another time.

WRAP Fill a buckwheat crêpe (see last week’s recipe) with shredded cooked chicken or prawns mixed with rehydrated arame seaweed, chopped red onion, frisée, ½ a chopped avocado and lime juice.
