The Wensleydale that we use in our restaurants is known as King Richard III. It is produced by a single farm in Yorkshire and has a wonderful creamy, honey flavour and a particularly moist texture associated with pre-war Wensleydales, making it suitable for shaving. York ham has an equally impressive depth of flavour. The quality ham and cheese in this sandwich is tempting enough, but what makes it really special is the home-made piccalilli – you can’t get more British than that.

2 thick slices of bread

Butter, for spreading

2 large slices of York ham

40g shavings of Wensleydale cheese

2 sticks of celery, cut into batons

Piccalilli, to serve

For the piccalilli (makes about 1.6 litres)

1 medium courgette

500g small pickling onions, peeled

1 cauliflower, about 500g, trimmed and cut into small florets
