Quick wraps

Mix crumbled feta with shredded Romaine lettuce, chopped tomato, cucumber and parsley. Season and sprinkle with lemon juice. Spoon onto toasted tortillas, along with a good dollop of humus and roll up.

Minty peas and beans

Add crumbled feta and mint to cooked peas and broad beans and toss with lemon and extra virgin olive oil, to serve alongside barbecued or grilled meat.

Filo pie

Mix 500g spinach with 125g feta, chopped spring onions and black pepper. Brush a baking dish with melted butter, lay three sheets of filo pastry (each brushed with melted butter) on top. Add the feta mixture and top with three sheets of filo as before. Bake for 40 minutes at 180C/gas 4 until golden.

Greek-style salad

Combine pieces of feta with really good ripe tomatoes (quartered), sliced red onions, chopped cucumber, parsley, mint and stoned Kalamata, or other purple-black olives. Toss with lemon juice and extra virgin olive oil.

Grilled summer veg

Drizzle extra virgin olive oil over grilled or barbecued peppers, aubergine and courgettes, scatter with chopped parsley and crumbled feta.
