Is this the easiest bread in the world? With no kneading and no rising, no yeast and no flour, it bakes into a dense, moist, nutty loaf akin to pumpernickel. Slice thinly and serve with smoked salmon, goat’s cheese, ham or tomatoes.

300g cracked or burghul wheat
100g wheat germ
100g barley, rye or wheat flakes
1tsp bicarbonate of soda
1tsp sea salt
100g sunflower seeds
100g pumpkin seeds
100g roughly chopped walnuts, brazils, etc
1tsp allspice
1tsp fennel or caraway seeds
1tbsp honey
500g natural low-fat yoghurt
1 egg, beaten

METHOD

Heat the oven to 180C/Gas 4. Mix the dry ingredients in a large bowl. Add the honey, yoghurt and beaten egg and toss until well mixed. Tip the mixture into a lightly oiled or non-stick 25cm by 10cm loaf tin and scatter the top with a few extra sunflower seeds and pumpkin seeds.

Bake in the centre of the oven for an hour. (Place a sheet of kitchen foil loosely over the top after 30 mins). Leave to cool in the tin, then turn out and slice.
