Makes 400g

This is a fabulous old-fashioned sweet that is delicious in ice-cream. You can find liquid glucose in large supermarkets.

75g clear honey
140g liquid glucose
400g sugar
5 tbsp water
2 tbsp baking soda

1 Line a shallow baking tray with parchment paper.

2 Place the honey, liquid glucose, water and sugar in a large heavy-based saucepan and heat gently, stirring occasionally until the sugar dissolves.

3 Increase the heat and cook until the mixture starts to turn a light golden colour. Mix in the baking soda. The mixture will erupt into a foaming mass. Pour immediately into the prepared baking tray.

4 Leave to cool for 1 hour and then break up with the end of a rolling pin. Store in an airtight jar until required.
