This is a rich, creamy strawberry gratin, that is ideal for one of those cooler summer evenings. All it does to the berries is multiply the calories by squillions and make them taste divine.

Ingredients
Feeds 4. Takes 10 mins.

500g strawberries
2tbsp Cointreau or berry liqueur
200g crème fraîche
2tbsp caster sugar or unrefined demerara sugar

Heat the overhead grill. Wash, dry and hull the strawberries and cut in half lengthwise if large. Arrange in a shallow gratin dish and sprinkle with the liqueur.

Stir the crème fraîche until smooth and spoon it over the berries. Scatter with the sugar and place under the grill until the sugar bubbles and melts, about four to five minutes. As the berries heat, they drop their juices which mingle with the cream to create a gorgeous strawberry sauce. Serve immediately, while hot.
