Serves 2

Make a crab cocktail mix and serve piled high on a slice of toasted sourdough bread. Fresh crab meat is increasingly easy to buy, but do check it thoroughly first for any stray flakes of shell. Eat with a knife and fork.

250g fresh white crab meat
Half a granny smith apple
4 tbsp mayonnaise
1 tbsp tomato purée or ketchup
Few drops Tabasco
1 small ripe avocado
Juice of 1 lime
1 baby gem lettuce, shredded
2 thick slices sourdough bread, and butter to spread
A little chopped fresh parsley or coriander, to serve
Sea salt and freshly ground black pepper

1 Check the crab for any flakes of shell using the tip of a fork. Place in a bowl.
2 Peel, core and finely chop the apple and mix in. Beat the mayonnaise with the tomato purée or ketchup, Tabasco to taste and seasoning. Mix with the crab meat.
3 Peel, stone and mash the avocado with seasoning and the lime juice. Mix roughly with the shredded lettuce.
4 Lightly toast both sides of the bread and spread one side with butter. Place on two plates and spoon on the avocado and lettuce, spreading to the edges.
5 Then top with the crab cocktail and serve at once, garnished with the chopped herbs.
